The Laroche wine house is one of the best wine producers in France. The company "Domaine Laroche" was founded in 1850 by Jean-Victor Laroche, who bought his first small vineyard in Chablis. Since 1967, the company has been managed by Michel Laroche, a representative of the fifth generation of the famous winemaker dynasty. The area of the company's own vineyards has expanded from 6 hectares to 100 hectares in Chablis and 30 hectares in Languedoc. Michel Laroche adheres to both the classic technology of wine production and is an innovator. A striking example is the use of a screw cap instead of the traditional one. Les Chanoines were the first monks to produce wine in Chablis, in the Obediencerie cellars. Chablis Le Chanoine is a tribute to them. The wine has a good balance, fresh acidity, bright fruit components and a strict minerality
Characteristics
Color characteristics: Golden pale straw
Taste: The taste is well structured, full-bodied, with shades of white fruits and spring flowers, complemented by good acidity and a long floral aftertaste
Aroma: The aroma is bright, fresh, elegant aroma with fruity notes and expressive mineral tones
Gastronomy: The wine is excellent as an aperitif, and also in combination with shrimp, oysters and Japanese cuisine
Appellation: Chablis AOC
Vineyards: The Chablis terroir, located on Cimmerian limestone, has both excellent acidity and remarkable finesse
Production method: Whole bunches are placed in a pneumatic press, then the must is left to settle for 12 hours at a temperature 12 - 15°C in specially designed wide tanks to accelerate the natural sedimentation process and to obtain pure grape juice. Fermentation lasts 15 days at 16°C in stainless steel tanks.
Aging method: The wine is aged for 6 months on the lees in stainless steel tanks

Colour characteristics: Bright, cherry-pink.
Taste: Medium-bodied, intense, well-balanced, soft and round, with a very long aftertaste. Recommended to drink young.
Aroma: Intense and at the same time delicate, fruity, with notes of red berries.
Gastronomy: Best paired with fish, raw shellfish, vegetarian dishes, fresh cheeses, Asian white meat dishes. Ideal as an aperitif.
